I am fully embracing everything pumpkin this season! I’ve had my fair share of PSLs at Starbucks already. And then I found out how many calories are in just one, so I looked up how to order it “skinny.” I decided it probably wasn’t worth it to spend all of my daily calories on one drink…well, not every day at least.
If you know me, you will remember me saying that I am not a gourmet cook or a baker. I barely find time to cook dinner for my family – the occasions that I plan meals and cook them are very rare. I have learned to live with that. In this season of life, I am doing what I can! I have decided to be content with the fact that my kids are well loved, nourished, and have a comfy bed to lay their heads at night.
The times that we are at home and I am able to plan and cook are an extra special treat for us! If you saw my Fall Bucket List post, you saw that there was an idea to make Pumpkin Bread. I decided to make some, because like I said earlier – pumpkin is everything in October! This recipe makes three loaves, so I kept one and gave two away.
I honestly was unsure of how my kids would like it. Depending on the day, either one of them can become the pickiest eater. I am happy to say that it was a home run for the whole family! We grabbed a piece for breakfast & for snacks. Josh loved having a quick and fuss-free breakfast option.
I am all about simple recipes. This one definitely is easy! The most important things to remember are to use self-rising flour and to grease + flour the bottom of the loaf pans. Use self-rising flour in the recipe and on the bottom of the loaf pan.
The recipe is pretty self-explanatory. It’s just mixing ingredients together, then putting it in the oven to bake!
I think making homemade bread is so fun! It is a non-intimidating option to make for your friends and family! Share a loaf with your neighbors, your co-workers or your mailman. You will definitely brighten someone’s day.

The Yummiest Pumpkin Bread
3 cups sugar
1 cup oil
1 teaspoon cinnamon
1 teaspoon nutmeg
½ teaspoon ginger
1 teaspoon cloves
⅔ cup water
1 can Libby’s pumpkin (15 ounce)
3 1/2 cups self-rising flour
1) Mix all ingredients EXCEPT the pumpkin & flour. then add:
1 can of Libby’s pumpkin (15 ounce)
3 ½ cups self-rising flour
2) Mix well with an electric mixer.
3. Pour evenly into 3 greased and floured loaf pans.
4. Bake for 1 hour at 350.
