Saturday mornings … just those two words linked together bring a peaceful joy to my soul! As a working mom, Saturdays are pretty much my second favorite day of the week (the first being Sunday, but more on that at another time). We don’t set an alarm for Saturday morning. My kids end up in our bed at some point, and we snuggle together, maybe even watch a Saturday morning cartoon together. Then, at some point, we roll out of bed and stay in our PJ’s for as long as possible.
We grab a cup of coffee. We might sit outside on our porch and enjoy the weather of a crisp, fall day. Or, we all hang out in the kitchen, make a yummy breakfast, and just savor each moment we have together. Juliette will tell us a story from school that week; Jameson will do something that makes all of us laugh.
One of the things I love most about being a mom is starting new traditions with my kids. Some traditions are a hit right away, and some don’t quite hit the mark. The key for me is to just try. There are certain things that I’ve done with my kids because that’s what my family did growing up. There are other things that I’ve learned about from friends and have tried it with my kids. Like I said, some of the new traditions are met with excitement, and others … not so much. But I always love to adopt those new, exciting traditions as ones of our own!
If you’ve been following me for a while, you know that I am not one of those moms that cooks gourmet meals or spends my time at home baking. Sometimes, I wish I was, but I’ve really come to learn that that’s just not me. God has me in this unique season of life, running a business, with small children. Running my business means that there are a lot of times I am not home. So when I am home with my kids, I do my best to make it extra special!
A long time family friend recently shared with me one of their traditions growing up – every Saturday, for as long as the now adult kids can remember, they had homemade waffles on Saturday morning. As soon as I heard this, I asked for all of the details. The very next Saturday that I was home with Josh and my kids, I got inspired to make the waffles. And girl, let me tell you – these are not your ordinary waffles. These are NEXT LEVEL waffles. I don’t know what it is that makes them so good. My kids LOVED them and begged me to make them the next morning as well!
These waffles can be made any way you want.The recipe is basic, so you can add flavors, like vanilla or pumpkin, into the batter. You can add toppings: classics like butter and syrup (my fav is linked here) or whipped cream … is your mouth watering yet?!?
These are not Belgian waffles, by the way. You have to use a “classic” waffle iron. I linked it here for you to get. It costs less than $20 on Amazon. Once you have your waffle batter, you simply use a soup ladle to put one full ladle of batter in the waffle iron when it has a green light. It will turn red as the waffle cooks, and then green again when it’s done. You can adjust the settings between 1 and 5 – 1 being just lightly cooked and 5 being a little on the crispy side. I prefer mine at about a 3, but Josh likes his as crispy as possible!

The best thing about this recipe is that it’s sooo easy! So easy that, when I got it from my friend, I texted her to ask if something was missing! She assured me that nothing was left out. I kinda didn’t believe her, but I followed her instructions anyway, and she was right. The waffles turned out perfect, and like I said, my kids were BEGGING me to make them again!

You can heat up your griddle, and let your family choose between waffles or pancakes … or dare I say, both? It’s Saturday after all … pretty much the universal cheat day, if you ask me!

2 cups self-rising flour
2 cups buttermilk
½ cup canola oil
- Separate egg whites and whisk with an electric mixer (check out my fav electric mixer here and my fav stand up mixer here!)
- Add all other ingredients to a large bowl and mix thoroughly with an electric mixer on low speed.
- Add egg whites to the mixture, and gently mix in.
- Add in a dash of flavor if you’d like (vanilla extract, cinnamon, etc.) but you don’t have to! The waffles have tons of flavor on their own.
- Use a Cuisinart Waffle iron (to purchase for less than $20, click here!)
- When the light turns green on the waffle iron, pour one soup ladle full of batter in the waffle iron; close the lid, and the light will turn red.
- Light will turn green when the waffle is ready! Carefully open the lid, use a fork or tongs to retrieve the waffle, and plate it up!
- Add toppings of your choice and ENJOY!
